- Cook pasta in generously salted, boiling water until it reaches an “al dente” texture. Drain thoroughly.
- While the pasta is cooking, heat 1 tablespoon of olive oil in a large, wide pan. Add the diced pancetta and cook until it is beautifully crispy. Using a slotted spoon, remove the cooked pancetta and set it aside. If the pancetta has rendered a significant amount of oil, carefully drain some off, leaving approximately 1 tablespoon of fat in the pan.
