Cheesy Scallion Beer Waffles

Ultimate Savory Beer-Raised Waffles with Creamy Cheddar & Fresh Scallions

Light, crisp, and unbelievably flavorful, these beer-raised waffles infused with sharp cheddar and vibrant scallions redefine breakfast and beyond.

There’s a special kind of magic that happens when a waffle iron comes to life, turning a simple morning into a celebratory occasion. The aroma of freshly cooked batter, the promise of a golden-brown, crispy exterior yielding to a fluffy interior – it’s pure culinary comfort. While classic sweet waffles dusted with powdered sugar and berries hold a special place in my heart, my palate has increasingly been drawn to the intriguing world of savory waffles.

For many years, sweet toppings often overshadowed the true beauty of a well-crafted waffle batter. But with savory creations, the intricate textures and foundational flavors of the waffle itself take center stage. This allows for a more complex and nuanced eating experience, moving waffles beyond just breakfast to become a versatile component of any meal.

Why Savory Waffles? A Culinary Revolution

A few years ago, I noticed savory waffles making waves across food magazines and culinary blogs. This trend sparked my curiosity and led me down an exciting path of experimentation. I began by subtly reducing the sugar content in my traditional waffle batter and introducing a variety of savory mix-ins. Fresh herbs, crispy crumbled bacon, and, as you’ll discover in this recipe, a delightful combination of sharp cheddar cheese and thinly sliced scallions, all proved to be game-changers.

The result? Waffles that are not just an alternative but a destination. Imagine a waffle that is wonderfully light and crisp, with a subtle, malty depth from beer, complemented by the gentle zest of onion and pockets of rich, melted cheddar cheese throughout. These aren’t just waffles; they’re an experience – a delicious and innovative way to utilize your trusty waffle iron for breakfast, brunch, lunch, or even dinner.

Savory waffles offer an incredible canvas for creativity. They move beyond the traditional syrup and butter pairing, opening doors to a world of culinary possibilities. They can be hearty, light, spicy, or herby, making them perfect for any mood or meal. This particular recipe for cheddar and scallion beer-raised waffles is a testament to that versatility, promising a unique flavor profile that will surprise and delight.

The Magic Behind Beer-Raised Waffles

You might be wondering, why beer? What does this common beverage bring to a waffle batter? The answer lies in its unique properties. Incorporating beer into your waffle batter provides an exceptional lift, thanks to its carbonation. More importantly, it imparts a subtle, yeasty flavor that mirrors the complex notes found in overnight raised waffles, but without the extensive planning and waiting time. This means you can enjoy that deep, fermented taste with a “mix-and-go” convenience.

This recipe liberates you from the need for overnight preparation, making these gourmet waffles accessible whenever the craving strikes. The beer acts as a quick leavening agent, contributing to a wonderfully airy texture while infusing the batter with a distinct, lightly malted character that elevates the entire dish.

Choosing Your Brew for Perfection

The type of beer you select plays a crucial role in the final flavor profile of these savory waffles. From extensive testing, I’ve found that a mild beer works best. My preference steers away from highly hopped varieties, as their inherent bitterness can overpower the delicate balance of the batter, especially diminishing the rich taste of the cheddar cheese. A beer with a strong, bitter hop presence can dominate the other ingredients, leading to a less harmonious flavor.

For consistently excellent results, I often use Heineken. It’s my go-to for many batter-based recipes, including fish and chips, because it offers a mild, clean taste that enhances without becoming watery or overly pronounced. This allows the cheddar and scallions to shine through beautifully, while the beer provides its unique textural and aromatic contributions.

However, taste is deeply personal, and I encourage experimentation! If your palate appreciates a stronger, more pronounced beer flavor, feel free to explore different brews. Perhaps a light lager, a pilsner, or even a subtle amber ale could offer an interesting twist. Just remember to consider the hop bitterness when making your choice. As with most culinary endeavors, this recipe is incredibly adaptable to your personal preferences and the beers you enjoy.

The Perfect Waffle Iron: Belgian vs. Classic

During the development of this savory waffle recipe, I experimented with both classic (thinner) and Belgian-style waffle makers. After numerous taste tests, my culinary panel and I consistently favored the Belgian-style waffles for this particular recipe.

The deeper pockets characteristic of a Belgian waffle iron create a remarkably creamy interior, which beautifully cradles the melted cheddar cheese. This allows the cheese flavor to emerge more prominently and contrasts wonderfully with the crisp exterior. The extra depth provides more surface area for the batter to cook into, resulting in a more substantial and satisfying waffle that truly highlights the savory additions.

However, I must emphasize that regardless of the type of iron used, these waffles are always devoured with enthusiasm! Whether you have a classic or a Belgian waffle maker at home, rest assured that you’ll be creating a delicious treat. So, don’t hesitate to “waffle away” with whatever equipment you have on hand. The joy of homemade waffles transcends the specific style of the iron.

Tips for Perfectly Crispy Savory Waffles

Achieving that coveted crispy exterior with a tender interior is key to an excellent waffle. Like most homemade waffles, these savory beer-raised delights are at their absolute best when served immediately after cooking. The longer they sit cooling off the iron, the more their delightful crispiness will soften. If you’re cooking a larger batch, a quick strategy to keep them warm and crispy is to place them on a wire rack set over a baking sheet in a 250°F (120°C) oven. This allows air to circulate, preventing sogginess.

Should your waffles lose some of their initial crispness, a brief return to the waffle iron or a few minutes in a toaster oven will revive them beautifully, bringing back that perfect crunch. Always preheat your waffle iron properly, and don’t hesitate to lightly grease it between batches if necessary, especially with cheesy batters, to prevent sticking and ensure a perfect release.

Avoid overmixing the batter, as this can develop the gluten in the flour too much, leading to tough waffles. Mix just until the ingredients are combined. Also, resist the urge to peek too early while the waffles are cooking; let the iron do its work until the steam subsides, indicating they are ready.

Serving Suggestions: Beyond Breakfast

While these savory beer-raised waffles are an incredible centerpiece for breakfast or brunch, their versatility extends far beyond. For a simple yet utterly satisfying morning meal, I love them topped with nothing more than a perfectly buttery fried egg. The warm, runny yolk cascades into the crisp nooks and crannies of the waffle, creating a heavenly symphony of flavors and textures.

But don’t stop there! These cheddar and scallion waffles make a fantastic accompaniment to a hearty bowl of chili, offering a unique twist on traditional cornbread. They’re also an unexpected and delightful partner to crispy fried chicken, creating an elevated take on the classic chicken and waffles pairing. The savory notes of the waffle cut through the richness of the chicken, making for a truly memorable meal. Prepare yourself: your maple syrup bottle might just get a little jealous!

Beer Raised Waffles with Cheddar and Scallions

by
Amanda Biddle
Light and crisp, with a lightly-malted flavor and creamy cheddar melted throughout, these beer raised waffles are delicious for breakfast and beyond.
Prep Time:
15 minutes
Cook Time:
20 minutes
Total Time:
35 minutes
Servings:
6 “Belgian-style” waffles, or 8 “Classic-style” waffles*

Ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon table salt
  • 1-1/2 teaspoons freshly-ground black pepper
  • ¼ cup granulated sugar
  • 2 large eggs , separated
  • ½ cup unsalted butter , melted
  • ¼ cup milk
  • 12 ounces mild beer **
  • 1 cup shredded cheddar
  • ¼ cup thinly-sliced scallions

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, pepper, and sugar. Add lightly-beaten egg yolks, milk, melted butter, and beer, whisking until combined (batter will remain just slightly lumpy). Stir in cheddar and scallions.
  2. In a medium bowl, beat egg whites until they hold stiff, but not dry, peaks. Fold egg whites into the waffle batter just until streaks disappear. Let batter stand while waffle iron heats.
  3. Heat waffle iron and grease according to your manufacturer’s instructions. Cook waffles until golden brown and crisp on the mid-range browning setting (adjust to your specific unit’s specifications). Serve immediately.***

Notes

*Yield will vary depending on the size of your waffle maker.

**I prefer a mild beer in this recipe so that the bitterness of the hops doesn’t overpower the flavor of the cheddar and scallions. I use Heineken with good results.

***For best texture, finished waffles can be held in a 250 degree F oven on a wire rack-lined baking sheet before serving, while the remaining waffles are being baked on the iron.
