Ingredients
For the Flatbreads:
- 1 pound ball pizza dough, at room temperature (homemade or good quality store-bought)
- Vegetable oil, for oiling grill grates
- 1-1/2 cups shredded Fontina cheese, divided
- ¼ cup grated Parmigiano Reggiano, divided
- 1 cup California Giant Berry Farms blackberries, divided
- 2 cups California Giant Berry Farms strawberries, sliced and divided
- ½ cup baby arugula, roughly chopped and divided
- ¼ cup fresh basil leaves, roughly torn and divided
- 2 teaspoons extra virgin olive oil, divided
- Kosher salt and freshly-ground black pepper, to taste
For the Balsamic Reduction:
- ½ cup balsamic vinegar
- 2 tablespoons honey
Instructions
Making the Flatbreads:
- Divide the pizza dough ball in half. On a lightly floured surface, roll each half into a rectangle approximately 1/8 to 1/4-inch thick. Using a fork, “dock” the entire surface of each crust to prevent excessive puffing during grilling. Carefully transfer the prepared dough to a rimless cookie sheet or a metal pizza paddle generously dusted with flour or cornmeal to prevent sticking.
- Preheat your grill to 500 degrees F over a medium-high flame. Once hot, thoroughly oil the grill grates to prevent the dough from sticking.
- Carefully slide one flatbread dough onto the oiled grill grates. Close the grill lid and cook over direct heat for about 3 minutes, or until distinct grill marks begin to appear on the underside. Using tongs, carefully flip the dough and grill for another 2-3 minutes on the second side. The dough should be golden and slightly charred.
- Remove the pre-grilled flatbread from the grill. Brush the top lightly with a portion of the olive oil. Evenly distribute half of the shredded Fontina and Parmigiano Reggiano cheeses over the crust. Arrange half of the sliced strawberries and blackberries on top of the cheese.
